Slow Cooker Apple Kielbasa

This warm and cozy slow cooker apple kielbasa is pure comfort food — sweet apples, smoky sausage, and warm spices come together with almost no effort. Perfect for fall gatherings, game days, or just a simple weeknight meal when you want the slow cooker to do the work.
INGREDIENTS:
1 lb kielbasa sausage sliced into ½-inch rounds — turkey kielbasa works too
2 large apples peeled, cored, and chopped — Honeycrisp, Gala, or Granny Smith
1/2 cup brown sugar dark or light brown
2 tbsp Dijon mustard yellow mustard can be used instead
1 tbsp apple cider vinegar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup onion finely chopped — sweet onion recommended
fresh chopped parsley optional garnish
DIRECTIONS:
Place sliced kielbasa in the bottom of your slow cooker.
In a medium bowl, stir together chopped apples, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and nutmeg until apples are coated.
Pour the apple mixture over the kielbasa in the slow cooker. Spread evenly if needed.
Sprinkle the chopped onion evenly on top.
Cover and cook on low for 4–6 hours, stirring gently once or twice if desired …
