Wholesome Oat Cookies with Dried Fruit & Nuts
INGREDIENTS:
Dry Ingredients
1 ½ cups rolled oats (gluten-free if needed)
½ cup whole wheat flour (or almond flour for GF)
1 tsp cinnamon
½ tsp baking soda
¼ tsp salt
Wet Ingredients
⅓ cup honey (or maple syrup for vegan)
¼ cup coconut oil, melted (or olive oil)
1 egg (or flax egg for vegan)
1 tsp vanilla extract
Mix-Ins
½ cup chopped nuts (almonds, walnuts, or pecans)
½ cup dried fruit (cranberries, apricots, or raisins)
Optional: 2 tbsp chia seeds or flaxseeds (for extra fiber)
DIRECTIONS:
1. Mix Dry & Wet Ingredients Separately
In a large bowl, whisk oats, flour, cinnamon, baking soda, and salt.
In another bowl, mix honey, melted coconut oil, egg, and vanilla.
🔥 Pro Tip: If dough seems too wet, add 1-2 tbsp extra oats!
2. Combine & Fold in Goodies
Pour wet mix into dry ingredients, stirring until just combined.
Fold in nuts, dried fruit, and seeds (if using).
3. Shape & Bake
Scoop 1.5-tbsp portions onto a parchment-lined baking sheet.
Flatten slightly (they won’t spread much).
Bake at 350°F (175°C) for 10-12 mins until edges are golden.
🍪 Texture Tip: For chewier cookies, underbake slightly (they firm up as they cool!).
4. Cool & Enjoy!
Let cool 10 mins on the tray (they’re fragile when hot!).
Store in an airtight container for up to 1 week.
