White Chocolate Cherry Shortbread Cookies

INGREDIENTS:

1 cup unsalted butter (softened to room temperature)

1/2 cup granulated sugar

2 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup dried cherries (chopped if large)

1/2 cup white chocolate chips or chunks

DIRECTIONS:

Step 1: Preheat Your Oven

Preheat your oven to 325°F (160°C) . Line a baking sheet with parchment paper or lightly grease it for easy cleanup.

Step 2: Make the Dough

In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).

Beat in the vanilla extract until fully incorporated.

Gradually add the flour and salt, mixing gently until a soft dough forms. Be careful not to overmix.

Step 3: Fold in the Mix-Ins

Gently fold in the chopped dried cherries and white chocolate chips, ensuring they’re evenly distributed throughout the dough.

Step 4: Shape the Cookies

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Use the bottom of a glass or the palm of your hand to gently flatten each ball into a disc, about 1/2-inch thick.

Step 5: Bake the Cookies

Bake in the preheated oven for 18–20 minutes , or until the edges are lightly golden and the centers are set.

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
