Velvet Strawberry Cheesecake

INGREDIENTS:
For the Crust
● 1½ cups graham cracker crumbs
● ¼ cup butter, melted
● 2 tbsp granulated sugar
For the Cheesecake Filling
● 16 oz cream cheese, softened
● 1 cup granulated sugar
● 3 large eggs
● 1 cup sour cream
● ½ cup strawberry puree
● 1 tsp vanilla extract
● 2 tbsp all-purpose flour
For the Strawberry Topping
● 1 cup fresh strawberries, sliced
● 2 tbsp granulated sugar
DIRECTIONS:
1️⃣ Preheat & Prep the Pan – Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
2️⃣ Make the Crust – Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan and bake for 8-10 minutes. Let cool.
3️⃣ Prepare the Cheesecake Filling – Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in sour cream, strawberry puree, vanilla, and flour until fully combined.
4️⃣ Bake the Cheesecake – Pour batter over the crust and bake for 55-60 minutes, or until the center is set but slightly jiggly. Let cool completely.
5️⃣ Prepare the Strawberry Topping – Toss sliced strawberries with sugar and chill in the fridge.
6️⃣ Assemble & Serve – Top the cooled cheesecake with the fresh strawberry topping before serving.
