Three-Ingredient Flourless Oatmeal Bread

INGREDIENTS:

2 cups rolled oats (certified GF if needed)

1 large ripe banana (or ½ cup unsweetened applesauce)

1 tsp baking powder

(Optional: ¼ tsp salt, 1 tbsp honey/maple syrup, chia seeds, or nuts)

DIRECTIONS:

1. Blend the Oats

Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper.

Blend oats into a fine flour (or use pre-ground oat flour).

2. Mix the Dough

In a bowl, mash the banana, then stir in oat flour and baking powder until a thick dough forms.

(Add extras like nuts or seeds here if using.)

3. Bake

Press dough into the loaf pan. Smooth the top.

Bake 25-30 minutes until golden and firm.

4. Cool & Slice!

Let cool 10 minutes before slicing.

Toast for extra crispness or enjoy soft!
