The Ultimate Chicken Piccata
INGREDIENTS:
2 boneless, skinless chicken breasts
1/2 cup all-purpose flour
Salt and pepper to taste
2 tbsp olive oil
2 tbsp butter
1/4 cup fresh lemon juice
1/4 cup capers
1/2 cup chicken broth
Fresh parsley for garnish
Lemon slices for garnish
DIRECTIONS:
Prepare the Chicken:
Slice the chicken breasts in half horizontally to create thinner cutlets.
Season the chicken with salt and pepper, then dredge each piece in flour, shaking off the excess.
Cook the Chicken:
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add the chicken to the pan and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
Make the Piccata Sauce:
In the same skillet, add the chicken broth and lemon juice, scraping up any bits left in the pan.
