The Best Mango Bread
INGREDIENTS:
1¾ cups AP Flour (250 grams)
1 teaspoon Baking Soda
¼ teaspoon Salt
2 tablespoon Lime Zest
Lime Juice
6 tablespoon Sugar (75 grams)
6 tablespoon Light Brown Sugar (80 grams)
1 Large Egg
1 cup Buttermilk (240 mL)
⅓ cup Canola Oil (80 mL)
2 tablespoon Honey
1 teaspoon Almond Extract
1 Large Mango – Peeled and chopped into small cubes
¼ cup Sliced Almonds
DIRECTIONS:
Preheat oven to 350°F. Butter a 9×5 inch loaf pan.
In a large bowl sift together flour, baking soda, and salt. Add sugars and mix.
In a medium bowl, whisk the egg with buttermilk, oil, honey, almond extract, lime juice and lime zest.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the chopped mangos and almonds.
Pour the batter into the prepared loaf pan
Bake the loaf for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean. Let cool for 10 minutes in the pan, then remove the bread from pan and let cool completely on a wire rack.
