Tahini Dressing

INGREDIENTS:

1/4 cup olive oil
1/4 cup smooth tahini paste
3 tablespoons fresh lemon juice
2 tablespoons ice cold water , or more as needed
1 tablespoon honey
2 teaspoons fresh minced ginger
1 clove garlic , minced
1/4 teaspoon fine sea salt
1/8 teaspoon pepper

DIRECTIONS:

You can blend all the ingredients in a blender until smooth, whisk vigorously in a small bowl, or place everything in a jar with a tight fitting lid and shake vigorously until thoroughly blended.
The dressing should be irresistibly thick and creamy. If it’s too thick to drizzle though, whisk in more cold water, 1/2 tablespoon at a time.
Use as desired. It’s great for salads, over roasted vegetables, or used as a dip for a raw veggie tray.
