Taco Meatloaf
Mexican flavor is more than just a food rather it is an experience, for those who haven’t tried Mexican food, this taco meatloaf recipe is a must to try.

INGREDIENTS:

2 lb. Ground beef
1 Large egg
 C. Salsa
½ C. Sour cream
4 Tbsp. Taco seasoning
1 C. Crushed tortilla chip crumbs
½ C. Shredded cheese plus more for garnish
Salt to taste
Chopped tomatoes and green onions for garnish

DIRECTIONS:

Preheat the oven to 350 degrees.
Place the ground beef, egg, salsa, sour cream, taco seasoning, tortillas chips, ½ cup of the shredded cheese and salt to taste in a mixing bowl. Knead with your hands until well combined.
Form the meat mixture into a loaf shape, and place into a 9×13 baking dish.
Bake for 60-70 minutes.
Top with more shredded cheese, chopped tomatoes and green onions.
Cover lightly with tented aluminum foil until the cheese has melted before serving.
