Sweet & Spicy Korean BBQ Meatloaf
INGREDIENTS:
For the Meatloaf:
1 ½ pounds ground beef
1 tablespoon olive oil
1 tablespoon sesame oil
¼ cup soy sauce
2 tablespoons brown sugar
2 tablespoons gochujang (Korean chili paste)
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 tablespoon rice vinegar
1 egg
1 cup panko breadcrumbs
For the Topping (optional but highly recommended):
¼ cup ranch dressing or creamy garlic dressing
2 tablespoons melted butter
For Garnish:
1 tablespoon green onions, sliced
Sesame seeds
DIRECTIONS:
Preheat the Oven
Start by preheating your oven to 375°F (190°C). This ensures that the oven is hot enough to cook the meatloaf evenly. Grease a loaf pan with a little olive oil or cooking spray to prevent sticking.
Mix the Ingredients
In a large mixing bowl, combine the ground beef, sesame oil, soy sauce, brown sugar, gochujang, minced garlic, minced ginger, rice vinegar, egg, and panko breadcrumbs. Use your hands or a spatula to mix everything together until it’s well combined. Don’t overmix; you just want everything to come together for a juicy meatloaf.
Shape the Meatloaf
