Sweet & Spicy Bacon Jam
INGREDIENTS:
1 pound thick-cut bacon, diced
1 large yellow onion, finely diced (about 1 ½ cups)
3 medium jalapeño peppers, seeded and diced (about 1 cup)
2 teaspoons minced garlic
½ cup packed light brown sugar
⅓ cup apple cider vinegar
¼ cup maple syrup
1 teaspoon chili powder
DIRECTIONS:
Cook the Bacon
In a medium skillet over medium heat, cook the diced bacon until crispy. Remove it from the pan and place it on a paper towel-lined plate to drain.
Prepare the Pan
Leave about ¼ cup of bacon grease in the pan and discard the rest.
Caramelize the Onions and Peppers
Add the diced onion and jalapeños to the pan. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes …
