Sweet Alabama Pecan Bread
INGREDIENTS:
½ cup unsalted butter, melted
1 cup granulated sugar
½ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups chopped pecans, toasted
DIRECTIONS:
Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan (or use parchment paper for easy removal).
Mix the Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs, vanilla extract, and buttermilk, mixing until smooth.
Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Bring It Together: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing, as it can make the bread too dense.
Add the Star Ingredient: Gently fold in the chopped pecans, ensuring they’re evenly distributed throughout the batter.
Bake to Perfection: Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Enjoy: Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.
