Stuffed Mashed Potato Nests

INGREDIENTS:

For the Potato Nests:

4 large russet potatoes

1 egg

½ cup shredded cheddar or mozzarella cheese (optional)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons flour or breadcrumbs (to bind)

Oil for frying or baking spray (if baking)

For the Fillings (Choose Your Favorite):

Cooked crumbled bacon

Scrambled eggs

Sautéed spinach and mushrooms

Guacamole or salsa

Grilled chicken or shrimp

Sour cream & chives

Fried egg + hot sauce

DIRECTIONS:

Step 1: Prep the Potatoes

Peel and boil the potatoes until tender (about 15–20 minutes). Drain and mash well while still warm.

Step 2: Add Binders

To the mashed potatoes, add an egg, salt, pepper, cheese (if using), and flour or breadcrumbs. Mix until combined — the mixture should hold together when pressed.

Step 3: Shape into Nests

Using a muffin tin or small ramekins lined with parchment paper or greased, press the potato mixture around the sides to form a nest shape with a well in the center.

Step 4: Bake or Fry

For baked nests : Bake at 400°F (200°C) for 20–25 minutes or until golden and crisp.
For fried nests : Pan-fry in oil until golden brown on both sides.

Step 5: Stuff & Serve

Fill each nest with your choice of toppings and serve immediately.
