Strawberry Shortcake Cheesecake Rolls
INGREDIENTS:
8 oz cream cheese, softened.
1/4 cup granulated sugar.
1 teaspoon vanilla extract.
1 cup heavy whipping cream.
1 cup fresh strawberries, diced.
2 tablespoons granulated sugar.
1 1/2 cups crushed shortbread cookies or graham crackers.
1/4 cup unsalted butter, melted.
6 large crepes or thin cake layers.
Powdered sugar for dusting.
DIRECTIONS:
Step 01
Beat cream cheese, sugar, and vanilla until smooth.
Step 02
Whip heavy cream to stiff peaks and fold into cream cheese mixture.
Step 03
Mix diced strawberries with sugar and let sit 10 minutes to macerate.
Step 04
Mix crushed cookies with melted butter until mixture resembles wet sand.
Step 05
Layer crepe with filling, crumbs, and strawberries. Roll tightly into sushi shape.
Step 06
Wrap rolls in plastic and refrigerate at least 1 hour.
Step 07
Slice into 1-inch pieces and dust with powdered sugar.
