SPINACH OATS PANCAKE

INGREDIENTS:

For the Pancake Batter:

1 cup rolled oats (blended into flour)

1 cup fresh spinach, blanched & chopped (or frozen, squeezed dry)

½ cup Greek yogurt (or curd)

1 egg (or flax egg for vegan)

¼ tsp baking soda

½ tsp garlic powder

½ tsp salt

2 tbsp water (as needed for consistency)

🧀 For the Cheese Filling:

½ cup shredded mozzarella or cheddar

1 tbsp grated Parmesan (optional but tasty!)

🍳 For Cooking:

1 tbsp olive oil or butter

DIRECTIONS:

1️⃣ Make the Batter

Blend oats into flour in a mixer.

Add spinach, yogurt, egg, baking soda, garlic powder, and salt. Blend until smooth.

Adjust thickness with water (should be like pancake batter).

2️⃣ Cook the Pancakes

Heat a nonstick pan over medium heat, add oil/butter.

Pour ¼ cup batter, spread slightly.

Sprinkle cheese in the center, cover with a little more batter.

Cook 2-3 mins per side until golden.
