Spicy Mexican Corn Bites

“A perfect fusion of zesty, creamy, and spicy flavors packed into crispy bite-sized treats!”
These Spicy Mexican Corn Bites are inspired by the vibrant flavors of Mexican street corn, combining sweet corn, tangy lime, and bold spices in a crunchy, cheesy snack. They’re great for parties, appetizers, or anytime you want a burst of flavor.
INGREDIENTS:
For the Corn Mixture:
1 cup fresh or frozen corn kernels
1/2 cup cotija cheese (or feta cheese, crumbled)
1/4 cup mayonnaise (or sour cream for a lighter option)
2 tablespoons fresh cilantro, chopped
1/2 teaspoon chili powder (or cayenne for extra spice)
1/4 teaspoon smoked paprika (optional)
1/2 teaspoon garlic powder
Juice of 1 lime
Salt and black pepper, to taste
For the Coating:
1 cup breadcrumbs (panko works best for extra crunch)
1/2 teaspoon chili powder (for added flavor)
1/2 cup grated Parmesan cheese (optional)
For Binding:
2 large eggs, beaten
For Frying (or Baking):
Vegetable oil (for frying, or cooking spray for baking)
DIRECTIONS:
Step 1: Prepare the Corn Mixture
In a medium bowl, combine the corn kernels, cotija cheese, mayonnaise, cilantro, chili powder, paprika, garlic powder, lime juice, and a pinch of salt and pepper.
Mix well and taste. Adjust seasoning if needed.
Step 2: Form the Bites
Using your hands or a small scoop, shape the corn mixture into bite-sized balls (about 1–1.5 inches in diameter).
Place the balls on a baking sheet and refrigerate for 20–30 minutes to firm up.
Step 3: Prepare the Coating
In one bowl, beat the eggs.
In another bowl, combine the breadcrumbs, Parmesan cheese, and chili powder.
Step 4: Coat the Corn Bites
Dip each ball into the beaten egg, ensuring it’s fully coated.
Roll it in the breadcrumb mixture, pressing gently to adhere the coating.
Step 5: Cook the Corn Bites
Frying Method:
Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat.
Fry the bites in batches for 2–3 minutes per side, or until golden and crispy.
Drain on paper towels.
Baking Method:
Preheat your oven to 400°F (200°C).
Place the coated bites on a baking sheet lined with parchment paper and spray lightly with cooking spray.
Bake for 15–20 minutes, flipping halfway through, until crispy and golden.
Step 6: Serve
Serve the Spicy Mexican Corn Bites warm with a side of lime wedges and your favorite dipping sauce, such as spicy mayo or avocado crema.
Garnish with extra cilantro or cotija cheese for added flair.
