Southern French Onion Butter Rice
This rich and savory rice dish is inspired by classic French onion flavors but made Southern-style, featuring caramelized onions, chicken broth, and a buttery finish with Parmesan. It’s a simple side that brings comfort and elegance to the table.
INGREDIENTS:
1 cup long-grain white rice rinsed until water runs clear
2 cups chicken broth
2 tablespoons unsalted butter
1 large onion thinly sliced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 cup Parmesan cheese grated
2 tablespoons fresh parsley chopped, optional for garnish
DIRECTIONS:
Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20 minutes.
While onions are cooking, rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, bring chicken broth to a boil. Add rice, butter, salt, pepper, and thyme. Stir well.
Reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and rice is tender.
Add caramelized onions to the cooked rice and stir to combine.
Stir in grated Parmesan cheese until melted and fully incorporated.
Remove from heat and let sit, covered, for 5 minutes to allow the flavors to meld.
Fluff with a fork, garnish with fresh parsley if desired, and serve warm.
