SOFT SOUR CREAM SUGAR COOKIES

INGREDIENTS

1 cup (2 sticks or 230g) unsalted butter, softened

1 1/2 cups (300g) granulated sugar

2 large eggs

1 cup (240g) sour cream

1 teaspoon vanilla extract

4 cups (480g) all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

DIRECTIONS:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

Stir in the sour cream and vanilla extract until the mixture is well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.

Divide the dough into two equal portions and shape each into a disk.

Wrap the dough disks in plastic wrap and refrigerate for at least 1 hour or until firm.

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

On a lightly floured surface, roll out one portion of the chilled dough to about 1/4-inch thickness.

Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets, leaving some space between each cookie.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Repeat the rolling and cutting process with the remaining dough.

Once the cookies are completely cooled, you can decorate them with frosting, sprinkles, or enjoy them as is.
