Smoked Sausage and Potato Skillet

INGREDIENTS:
2 tablespoons olive oil
1 pound smoked sausage sliced into rounds
1 pound potatoes Russet, Yukon Gold, or baby, diced into small cubes
1 cup bell peppers chopped (any color)
1 medium onion chopped
Spices and Seasonings
1 teaspoon garlic powder
1 teaspoon paprika
Salt to taste
Pepper to taste
Optional Garnishes
¼ cup shredded cheese cheddar or your favorite
1 tablespoon fresh parsley chopped
½ lemon juiced (optional)
DIRECTIONS:
Prep Your Ingredients: Slice the smoked sausage into bite-sized rounds. Dice the potatoes into small cubes for even cooking. Chop your vegetables.
Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and crispy. Season with salt, pepper, and paprika.
Add the Sausage: Push the potatoes to one side of the skillet and add the sliced smoked sausage. Cook for 5 minutes until browned and heated through.
Toss in Vegetables: Add bell peppers, onions, or other vegetables of choice. Sauté for 3-5 minutes until tender.
Combine and Serve: Stir everything together, ensuring the spices coat all the ingredients. Garnish with fresh parsley or shredded cheese if desired.
