Slow Cooker Onion and Potato Soup
This humble slow cooker soup is the definition of comfort—just onions, potatoes, and broth slowly transforming into something rich, cozy, and deeply satisfying. It’s simple, budget-friendly, and tastes like it’s been passed down for generations.

INGREDIENTS:

3 yellow onions thinly sliced

4 russet potatoes peeled and cut into chunks

6 cups beef broth or vegetable broth

DIRECTIONS:

Place sliced onions evenly in the bottom of the slow cooker.
Add chopped potatoes on top of the onions.
Pour broth over everything and gently press down so ingredients are mostly submerged.
Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours.
Stir gently, allowing some potatoes to break apart and thicken the soup.
Optional: mash a portion of the potatoes for a thicker, creamier texture.
Season with salt and pepper if needed, then serve warm.
