Slow Cooker Italian Potatoes
INGREDIENTS:
2 pounds of baby potatoes, halved or quartered
1/4 cup olive oil
1 tablespoon Italian seasoning
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
DIRECTIONS:
Prepare the Potatoes:
Start by washing the baby potatoes thoroughly and patting them dry. Halve or quarter them, depending on their size, so that all pieces are relatively uniform. This will ensure they cook evenly.
Create the Olive Oil Mixture:
In a small bowl, whisk together the olive oil, Italian seasoning, minced garlic, grated Parmesan cheese, salt, and pepper. The combination of these ingredients creates a flavorful coating that will infuse the potatoes with rich, Italian flavors as they cook.
Combine in the Slow Cooker:
Place the halved or quartered baby potatoes in your slow cooker. Pour the olive oil mixture over the potatoes, then use a spoon or spatula to toss them until they’re evenly coated.
Slow Cook the Potatoes:
Cover the slow cooker and cook on low for 4-5 hours, or until the potatoes are tender and cooked through. The low and slow cooking method allows the potatoes to absorb all the delicious flavors without turning mushy.
