Slow Cooker Ground Beef Casserole
A hearty, comforting casserole made right in your slow cooker. This easy recipe brings together tender ground beef, wholesome veggies, and a creamy sauce, all crowned with melted cheddar cheese. Perfect for busy days when you want a cozy meal ready when you are.

INGREDIENTS:

1 pound ground beef

1 onion chopped

2 cloves garlic minced

1 cup carrots sliced

1 cup potatoes diced

1 cup corn kernels

1 cup green beans chopped

1 can cream of mushroom soup 10.5 oz

1 cup shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon dried parsley plus extra for garnish, if desired

DIRECTIONS:

In a skillet over medium heat, brown the ground beef until fully cooked and crumbly. Drain excess grease.
Add the chopped onion and minced garlic to the skillet. Cook until the onion softens and turns translucent.
Transfer the beef mixture to your slow cooker.
Add the sliced carrots, diced potatoes, corn, and chopped green beans. Stir gently to combine.
Stir in the can of cream of mushroom soup, salt, black pepper, dried thyme, and dried parsley until well mixed.
Cover and cook on LOW for 6–8 hours.
About 30 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let it melt.
Serve hot with an optional sprinkle of fresh parsley. Enjoy!
