Slow Cooker Amish Potato Soup
A hearty, comforting soup that brings together tender potatoes, aromatic vegetables, and a rich creamy finish — all with the ease of a slow cooker. This Amish-style potato soup is perfect for cozy family dinners or lazy weekends when you want homemade goodness without the fuss.

INGREDIENTS:

6 medium potatoes peeled and diced; Russet, gold, or red

1 medium onion chopped

2 carrots diced

2 stalks celery diced

4 cups chicken broth homemade or boxed

1 cup heavy cream or half-and-half

2 tbsp butter

1 tsp dried thyme or parsley or rosemary

1 tsp garlic powder or a few minced cloves

salt and pepper to taste

DIRECTIONS:

Add potatoes, onion, carrots, and celery to your slow cooker. Pour in the chicken broth and sprinkle in thyme, garlic powder, salt, and pepper. Stir if you like.
Cover and cook on low for 6–8 hours, until the vegetables are tender.
Use a potato masher or immersion blender to mash some of the potatoes to thicken the soup, leaving some chunks for texture.
Stir in the heavy cream and butter. Cover again and cook on low for another 30 minutes.
Taste and adjust salt and pepper as needed. Serve hot with your favorite toppings if desired.
