INGREDIENTS:

2 pounds boneless, skinless chicken breasts (about 4 medium breasts)
1 cup bottled Italian salad dressing (zesty or regular)
1/4 cup grated Parmesan cheese

DIRECTIONS:

Place the raw chicken breasts in an even layer at the bottom of a 4- to 6-quart slow cooker.
In a small bowl, stir together the Italian dressing and Parmesan cheese until the cheese is evenly mixed.
Pour the dressing and Parmesan mixture over the chicken, coating all pieces. Use a spoon to nudge the dressing underneath the chicken.
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and shreds easily. Avoid lifting the lid frequently.
Taste the cooking juices and adjust seasoning with salt or pepper if needed.
