INGREDIENTS:

For the Bisque:
1 tablespoon olive oil
½ cup onion, finely chopped
½ cup celery, diced
½ cup carrots, diced
2 cloves garlic, minced
4 cups seafood stock (or vegetable broth)
1 cup heavy cream
½ cup dry white wine (optional, for depth of flavor)
2 tablespoons tomato paste
½ teaspoon paprika
½ teaspoon Old Bay seasoning (optional, but enhances the seafood flavors!)
¼ teaspoon cayenne pepper (optional, for a spicy kick)
Salt & black pepper, to taste
For the Seafood:
½ pound cooked lump  crab meat
½ pound cooked shrimp, peeled & deveined
½ pound cooked lobster meat, chopped
For Garnish (Optional):
Fresh parsley, chopped
Croutons or crusty bread for dipping
A drizzle of extra cream or a squeeze of lemon

DIRECTIONS:

1. Sauté the Aromatics:
Heat olive oil in a large pot over medium heat.
Add onions, celery, and carrots and cook for 3–4 minutes until softened.
Stir in garlic and cook for 30 seconds until fragrant.
2. Build the Bisque Base:
Stir in tomato paste, paprika, Old Bay seasoning, and cayenne pepper, cooking for 1 minute to enhance the flavors.
Pour in the white wine (if using) and let it reduce for 2 minutes.
Add the seafood stock and bring to a simmer. Let cook for 10–15 minutes to blend flavors.
3. Blend for a Smooth Texture (Optional):
For a silky bisque, use an immersion blender to puree the soup until smooth.
