INGREDIENTS:

1 tbsp olive oil (or butter)

1 small onion, finely diced

2 cloves garlic, minced

1 lb ground beef, pork, turkey, or chicken (or a mix)

Salt and black pepper to taste

1 tsp smoked paprika (optional, for depth)

1/2 tsp ground cumin (optional, for warmth)

1/4 cup tomato paste (or ketchup for sweetness)

1/4 cup water or beef broth

1 cup shredded cheese (cheddar, mozzarella, or a blend)

Optional: Fresh parsley or cilantro, chopped

For the Pastry:

1 sheet puff pastry (store-bought or homemade), thawed

1 egg, beaten (for egg wash)

DIRECTIONS:

1. Preheat and Prep

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Roll out the puff pastry sheet on a lightly floured surface if needed, ensuring it’s smooth and even.

2. Cook the Filling

Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3–4 minutes.

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the minced meat, breaking it apart with a wooden spoon, and cook until browned and fully cooked through (about 6–8 minutes).

Stir in the salt, black pepper, smoked paprika, cumin, tomato paste, and water/broth. Simmer for 2–3 minutes until the mixture thickens slightly. Remove from heat and let cool slightly.

Stir in half of the shredded cheese and fresh herbs (if using). Set aside.

3. Assemble the Pastries

Cut the puff pastry sheet into squares or rectangles (about 3×3 inches each).

Place a spoonful of the meat mixture in the center of each square, leaving space around the edges.

Top the filling with a little more shredded cheese.

Fold the pastry over the filling to create a triangle, rectangle, or envelope shape. Press the edges firmly with a fork to seal.

Place the assembled pastries on the prepared baking sheet, spacing them evenly apart.

Brush the tops with the beaten egg for a golden, shiny finish.

4. Bake Until Golden

Bake in the preheated oven for 15–20 minutes, or until the puff pastry is puffed up, golden brown, and flaky.

Remove from the oven and let cool slightly before serving.

5. Serve and Enjoy

Serve warm as a snack, appetizer, or light meal.

Pair with dipping sauces like marinara, sour cream, or spicy mayo for extra flavor.
