These Savory Mashed Potato Puffs are the perfect way to turn leftover mashed potatoes into crispy, cheesy, bite-sized delights! With a golden, crispy exterior and a fluffy, flavorful center, these puffs make an irresistible appetizer, side dish, or snack. They’re easy to make, customizable, and completely addicting!
INGREDIENTS:
2 cups mashed potatoes (leftover or freshly made)
2 large eggs, beaten
½ cup shredded cheddar cheese
¼ cup grated Parmesan cheese
¼ cup sour cream or Greek yogurt
2 tablespoons chopped green onions or chives
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional, for extra flavor)
½ cup breadcrumbs (for extra crispiness, optional)
DIRECTIONS:
1. Preheat & Prep:
Preheat oven to 400°F (200°C).
Grease a mini muffin tin or line with parchment paper for easy removal.
2. Mix the Potato Batter:
In a large mixing bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan, sour cream, green onions, garlic powder, onion powder, salt, pepper, and paprika.
Stir until fully mixed. If the mixture is too loose, add ¼ cup breadcrumbs to help it hold its shape.
3. Fill the Muffin Tin:
Spoon the mixture into each mini muffin cup, filling about ¾ full.
Sprinkle the tops with extra cheese or breadcrumbs for added crispiness.
4. Bake Until Golden & Crispy:
Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy.
Let cool for 5 minutes, then use a knife or spoon to gently pop them out of the muffin tin.
