2 tbsp butter
1 tbsp olive oil
1 lb (450g) mushrooms, sliced (button, cremini, or your favorite variety)
1 large onion (about 200g), thinly sliced
2 garlic cloves, minced
1 tsp fresh thyme (or 1/2 tsp dried thyme)
1 tbsp soy sauce (optional, for added umami)
Salt and black pepper, to taste
Chopped parsley, for garnish
DIRECTIONS:
Heat the Pan:
In a large skillet, melt the butter and olive oil over medium heat until hot and shimmering.
