Sautéed Asparagus and Mushrooms
INGREDIENTS:
1 pound asparagus, trimmed and cut into 2-inch pieces
8 ounces mushrooms, sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon lemon juice
Salt and pepper to taste
DIRECTIONS:
Heat olive oil in a large skillet over medium heat.
Add garlic and sauté for 1-2 minutes until fragrant.
Add asparagus and cook for 5 minutes, stirring occasionally.
Add mushrooms and continue to cook for another 5 minutes, or until vegetables are tender.
Stir in soy sauce and lemon juice. Season with salt and pepper to taste.
Serve hot and enjoy!
