Rotisserie Chicken Mushroom Soup

INGREDIENTS:

1 onion, diced
2 celery sticks, finely chopped
4 garlic cloves, crushed
1 lb mushrooms, thinly sliced
2 tsp fresh thyme
1 rotisserie chicken, shredded
6 cups stock
1 cup cream
3 cups spinach, chopped
Pinch of chili flakes
Salt and pepper to taste

DIRECTIONS:

Heat olive oil or butter in a large pot.
Cook onion and celery until soft.
Add mushrooms, cook until golden.
Add thyme and garlic, cook until fragrant.
Pour in stock and cream, simmer for 5 minutes.
Add chicken and spinach, simmer for 5 more minutes.
Season with salt, pepper, and lemon juice to taste.
