Roasted Garlic Cheddar Cauliflower Soup

INGREDIENTS:
1 large head of cauliflower, chopped
1 head garlic
2 tablespoons olive oil
1 onion, diced
3 cups vegetable broth
1 cup shredded sharp cheddar cheese
Salt and pepper to taste
Fresh parsley for garnish (optional)
DIRECTIONS:
Preheat oven to 400°F (200°C). Drizzle cauliflower and garlic head with olive oil, roast for 30 minutes.
In a pot, sauté onion until soft. Add roasted cauliflower, garlic (squeezed from cloves), and broth. Simmer for 10 minutes.
Blend until smooth, stir in cheese, salt, and pepper. Garnish and serve warm.
