Potato Veggie Bites
INGREDIENTS:
350g potatoes, peeled
150g carrot, peeled
20g green onions, finely chopped
1/5 tsp black pepper
1/4 tsp salt
2 large eggs
3 tbsp cornstarch
3 tbsp wheat flour
Oil for frying
DIRECTIONS:
Prepare the Vegetables:
Boil the potatoes and carrot in a pot of water until they are soft and fully cooked. Drain them well and allow them to cool slightly.
Mash and Mix:
In a large bowl, mash the boiled potatoes and carrot together until smooth. Stir in the finely chopped green onions, black pepper, and salt, mixing until all the ingredients are well combined.
Add Binders:
Crack the eggs into the mixture and add the cornstarch and wheat flour. Mix everything together until you have a cohesive mixture that can be shaped into balls. If the mixture feels too sticky, you can add a little more flour to adjust the consistency.
Form the Poppers:
With clean hands, shape the mixture into small balls, about the size of a walnut. This is your chance to make them as uniform as possible for even cooking.
Fry the Poppers:
Heat a good amount of oil in a deep frying pan over medium heat. Carefully add the potato poppers to the hot oil and fry them for about 8 minutes, or until they are golden brown and crispy on the outside. You may need to do this in batches to avoid overcrowding the pan.
Serving:
Once fried, use a slotted spoon to remove the poppers from the oil and place them on a plate lined with paper towels to drain any excess oil.
