Pineapple-Glazed Pork Loin

INGREDIENTS:

2 lb pork loin
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 cup pineapple chunks (fresh or canned)
1/2 cup pineapple juice
1/4 cup brown sugar
2 tbsp soy sauce
2 cloves garlic, minced
1 tbsp cornstarch mixed with 2 tbsp water (slurry)
Fresh parsley, chopped (for garnish)

DIRECTIONS:

Prep and Season: Preheat oven to 375°F (190°C). Pat the pork loin dry with paper towels and season with salt and pepper.
Sear the Pork: In an oven-safe skillet over medium-high heat, heat olive oil. Sear the pork loin on all sides until golden brown, about 2-3 minutes per side.
Make the Glaze: In a small saucepan, combine pineapple juice, brown sugar, soy sauce, and garlic. Bring to a simmer and cook for 2-3 minutes. Stir in the cornstarch slurry and simmer until thickened.
Roast: Pour half of the glaze over the pork loin. Place the skillet in the oven and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C), basting halfway through with the remaining glaze.
Add Pineapple Chunks: During the last 10 minutes of cooking, add pineapple chunks to the skillet around the pork.
Rest and Serve: Let the pork rest for 5-10 minutes before slicing. Garnish with fresh parsley and serve with the roasted pineapple.
