INGREDIENTS:
12 oz penne pasta
1 lb Italian sausage (casings removed)
3 cups fresh spinach
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
½ teaspoon red pepper flakes (optional, for a spicy kick)
Salt & black pepper, to taste
½ teaspoon Italian seasoning (optional, for extra flavor)
DIRECTIONS:
1. Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the penne pasta and cook until al dente (according to package instructions).
Drain and set aside, reserving ½ cup of pasta water for later.
2. Cook the Sausage & Garlic:
In a large skillet over medium heat, heat 1 tablespoon of olive oil.
Add the Italian sausage, breaking it apart with a wooden spoon.
Cook for 5–6 minutes, until browned and fully cooked.
Stir in the minced garlic and red pepper flakes, cooking for 1 more minute until fragrant.
3. Make the Creamy Sauce:
Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
Add the heavy cream and Parmesan cheese, stirring continuously until the cheese melts.
Let the sauce simmer for 2–3 minutes until slightly thickened.
Stir in the fresh spinach and cook until wilted (about 1 minute).
4. Combine Everything:
Add the cooked penne pasta to the skillet and toss to coat in the sauce.
If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
Season with salt, black pepper, and Italian seasoning to taste.
