Peanut Butter Lunch Lady Cookie Bars
INGREDIENTS:
For the Bars:
1 cup unsalted butter (softened to room temperature)
1 cup granulated sugar
1 cup packed brown sugar
1 cup creamy peanut butter
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
For the Glaze:
1 cup powdered sugar
2–3 tablespoons milk (or cream)
1/2 teaspoon vanilla extract
Optional : Sprinkles, chopped peanuts, or mini chocolate chips for topping
DIRECTIONS:
Preheat your oven to 350°F (175°C) . Line an 8×8-inch baking pan with parchment paper or lightly grease it for easy removal.
Step 2: Make the Cookie Dough
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the peanut butter until smooth and fully incorporated.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 3: Combine the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Step 4: Press the Dough into the Pan
Transfer the dough to the prepared baking pan. Use a spatula or your hands to press the dough evenly into the pan, creating a smooth, even layer.
Step 5: Bake the Bars
Bake in the preheated oven for 20–25 minutes , or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out clean or with a few moist crumbs.
Let the bars cool completely in the pan before adding the glaze.
Step 6: Make the Glaze
In a small mixing bowl, whisk together the powdered sugar, milk (or cream), and vanilla extract until smooth. Adjust the amount of milk for your desired consistency.
Drizzle the glaze evenly over the cooled bars. Add sprinkles, chopped peanuts, or mini chocolate chips on top if desired.
Step 7: Slice and Serve
Once the glaze has set, slice the bars into squares and enjoy the soft, chewy goodness!
