Peanut Butter Frozen Yogurt Bars
INGREDIENTS:
For the Bars:
2 cups plain Greek yogurt (or vanilla for added sweetness)
1/2 cup creamy peanut butter (natural, unsweetened preferred)
1/4 cup honey (or maple syrup for a vegan option)
1 teaspoon vanilla extract
Pinch of salt
For the Chocolate Coating:
1 cup dark chocolate chips (or semi-sweet chocolate)
1 tablespoon coconut oil (optional, for smooth melting)
Optional Mix-Ins:
Mini chocolate chips
Chopped peanuts
Crushed pretzels
Fresh berries
DIRECTIONS:
Step 1: Prepare the Base
In a large mixing bowl, whisk together the Greek yogurt, peanut butter, honey, vanilla extract, and salt until smooth and well combined.
Taste and adjust sweetness by adding more honey if desired.
Step 2: Assemble the Bars
Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Pour the peanut butter-yogurt mixture into the pan and spread it evenly with a spatula.
If using mix-ins like chocolate chips or crushed pretzels, sprinkle them evenly over the top and gently press them into the mixture.
Step 3: Freeze the Bars
Place the pan in the freezer for 2–3 hours , or until the mixture is firm and sliceable.

In a microwave-safe bowl, melt the dark chocolate chips and coconut oil (if using) in 20-second intervals, stirring between each, until smooth and glossy.
