PEACH COBBLER EGG ROLLS
INGREDIENTS:
10 egg roll wrappers.
1 large can of peach slices, drained.
¼ cup water.
¼ cup granulated sugar.
1 tbsp cornstarch.
1 tsp vanilla extract.
A splash of fresh lemon juice.
1 large egg, beaten (for sealing).
2 tbsp melted butter.
½ cup brown sugar.
1 tbsp + 1 tsp cinnamon, separated.
DIRECTIONS:
Step 01
Heat your oven to 400°F and line a baking tray with parchment.
Step 02
Chop peaches into small pieces. Over medium-high heat, dissolve cornstarch in water, add to peaches along with granulated sugar, cooking until thick. Mix in vanilla, a teaspoon of cinnamon, and lemon juice, then let the mixture cool.
Step 03
Place each wrapper flat, add peach mix at one end, fold edges, and roll. Use beaten egg to seal.
Step 04
Brush rolls with butter, then coat with a mix of brown sugar and remaining cinnamon.
Step 05
Place rolls on the tray, bake for 15-20 minutes till they turn golden and crispy.
