Parmesan-Crusted Asparagus Fries

INGREDIENTS:

2 large eggs, beaten

2 tablespoons all-purpose flour (or gluten-free flour)

2/3 cup seasoned panko breadcrumbs (or gluten-free panko)

1 pound asparagus (approximately 20 spears, tough ends removed)

2/3 cup shredded Parmesan cheese (or dairy-free Parmesan)

Olive oil spray

DIRECTIONS:

Combine the panko breadcrumbs and Parmesan cheese in a shallow dish.

In another bowl, whisk the eggs and flour together until smooth.

Coat each asparagus spear first with the egg mixture, then roll it in the panko-Parmesan mixture. Lightly spray with olive oil.

Air Fryer Method: Arrange the coated asparagus in a single layer in the air fryer basket. Cook at 380°F for 6-7 minutes, flipping halfway, until golden and tender.

Oven Method: Preheat your oven to 425°F. Lightly coat a baking sheet with oil. Place the asparagus on the sheet, spray with oil, and bake for 12-14 minutes, flipping halfway, until golden and cooked through.
