Parmesan-Crusted Asparagus Fries
INGREDIENTS:
2 large eggs, beaten
2 tablespoons all-purpose flour (or gluten-free flour)
2/3 cup seasoned panko breadcrumbs (or gluten-free panko)
1 pound asparagus (approximately 20 spears, tough ends removed)
2/3 cup shredded Parmesan cheese (or dairy-free Parmesan)
Olive oil spray
DIRECTIONS:
Combine the panko breadcrumbs and Parmesan cheese in a shallow dish.
