Pancake Sausage Casserole
This Pancake Sausage Casserole is a comforting breakfast bake that combines fluffy pancake layers with savory sausage and sweet maple syrup. Perfect for weekend mornings or holiday brunches.

INGREDIENTS:

1 pound breakfast sausage

2 cups pancake mix

1 1/2 cups milk

2 large eggs

1 tsp vanilla extract

1/2 cup maple syrup

1/4 cup butter melted

1 tsp cinnamon optional

DIRECTIONS:

Preheat oven to 350°F (175°C).
In a skillet, cook breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
In a large bowl, combine pancake mix, milk, eggs, vanilla extract, and cinnamon if using. Stir until just combined.
Grease a 9×13-inch baking dish with butter or cooking spray.
Pour half the pancake batter into prepared baking dish.
Evenly distribute cooked sausage over batter.
Pour remaining pancake batter over sausage.
Drizzle maple syrup over the top of the casserole.
Bake 30-35 minutes, until top is golden and a toothpick inserted in the center comes out clean.
Let cool for a few minutes before slicing and serving.
