OLD SOUTH COCO-COLA PORK LOIN

INGREDIENTS:

For the marinade:

1 C. Coca-Cola
¼ C. Soy sauce
3 Tbsp. Oil
2 Tbsp. Dijon mustard
 C. Ketchup
2 Tbsp. Worcestershire
1 Tbsp. Dry mustard
2 tsp. Minced garlic
1 tsp. Ginger
2 Tbsp. Balsamic vinegar

For the sauce:

1 Tbsp. Cornstarch
1 C. Brown sugar
2 Tbsp. Butter
½ tsp Dry mustard
 C. Coca-Cola
 C. Balsamic vinegar
Salt and pepper to taste

DIRECTIONS:

Preheat the oven to 325 degrees.
Add the ingredients for the marinade into a casserole dish, and stir to combine well.
Place the pork loin into the marinade, and refrigerate it overnight, turning it several times so that each side gets evenly coated.
Remove the pork loin from the marinade, place on a baking rack or roasting pan, and bake for 30-40 minutes per pound until the internal temperature is at least 175 degrees.
