Old-Fashioned Chocolate Pie
INGREDIENTS:
For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter (cold and cubed)
3-4 tablespoons ice water
For the Chocolate Filling:
1 1/2 cups granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
4 large egg yolks (lightly beaten)
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Topping (Optional):
Whipped cream
Chocolate shavings or curls
DIRECTIONS:
Step 1: Make the Pie Crust
In a large bowl, whisk together the flour and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Roll out the dough on a floured surface and transfer it to a 9-inch pie dish. Trim and crimp the edges.
Preheat your oven to 375°F (190°C). Prick the bottom of the crust with a fork, line it with parchment paper, and fill it with pie weights or dried beans.
Bake for 15 minutes, then remove the weights and parchment paper. Bake for another 10 minutes, or until golden brown. Let it cool completely.
Step 2: Prepare the Chocolate Filling
In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
Gradually whisk in the milk until smooth.
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Boil for 1 minute, then remove from heat.
Gradually whisk about 1 cup of the hot mixture into the beaten egg yolks to temper them.
Return the egg mixture to the saucepan and cook for 2-3 minutes, stirring constantly, until thickened …
