Old-Fashioned Buckeyes
Soft peanut butter balls dipped in chocolate with a little circle left showing on top, just like a buckeye nut. A no-bake holiday candy.
INGREDIENTS:
1 1/2 cups creamy peanut butter
1/2 cup butter softened
1 tsp vanilla extract
4 cups powdered sugar
2 cups semi-sweet chocolate chips
1 tbsp shortening or coconut oil
DIRECTIONS:
Beat the peanut butter, butter and vanilla until smooth. Mix in the powdered sugar until a firm dough forms.
Roll into 1-inch balls and set on a parchment-lined tray.
Push a toothpick into each ball and freeze for 30 minutes.
Melt the chocolate with the shortening until smooth.
Hold each ball by the toothpick and dip it, leaving a circle of peanut butter showing on top.
Set back on the tray, pull out the toothpick and smooth the hole with a finger. Chill until set.
