Oatmeal, Apple and Carrot Cake
INGREDIENTS:
Makes 1 Loaf or 9×9 Cake
For the Cake:
1 cup (90g) rolled oats
1 ½ cups (180g) whole wheat flour (or all-purpose)
1 tsp baking powder
1 tsp baking soda
1 ½ tsp cinnamon
½ tsp nutmeg
¼ tsp salt
2 large eggs
½ cup (120ml) maple syrup or honey
⅓ cup (80ml) melted coconut oil or vegetable oil
1 tsp vanilla extract
1 cup (120g) grated carrots
1 cup (120g) grated apple (peeled)
½ cup (60g) chopped walnuts or pecans (optional)
For the Glaze (Optional):
½ cup (60g) powdered sugar
1-2 tbsp orange juice or milk
½ tsp vanilla extract
(Optional: Add raisins or shredded coconut for extra texture!)
DIRECTIONS:
1. Prep & Preheat
Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or 9×9 square pan.
2. Mix Dry Ingredients
In a bowl, whisk oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. Combine Wet Ingredients
In another bowl, beat eggs, maple syrup, oil, and vanilla.
Stir in grated carrots and apple.
4. Bake to Perfection
Fold wet ingredients into dry until just combined.
Pour into the pan and bake for 40-50 mins (until a toothpick comes out clean).
5. Glaze & Serve!
Whisk powdered sugar, juice, and vanilla for glaze (if using).
Drizzle over cooled cake.
