INGREDIENTS:

For the Chicken Bombs:

1 lb ground chicken (or turkey for a lighter option)

8 oz cream cheese, softened

¼ cup ranch dressing (store-bought or homemade)

1 cup shredded mozzarella cheese, divided

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For Breading:

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 egg, lightly beaten

For Frying:

Vegetable oil (for frying)

DIRECTIONS:

Step 1: Prepare the Filling

In a mixing bowl, combine the softened cream cheese, ranch dressing, and half of the shredded mozzarella cheese. Mix until smooth and well combined. Set aside.

Step 2: Form the Chicken Bombs

In another mixing bowl, combine the ground chicken, garlic powder, onion powder, salt, and pepper. Mix gently until just combined—be careful not to overwork the meat.

Take about 2 tablespoons of the chicken mixture and flatten it into a disc shape. Place a small spoonful of the cream cheese-ranch filling in the center. Wrap the chicken around the filling, sealing the edges tightly to form a ball. Repeat with remaining ingredients.

Step 3: Bread the Bombs

Set up a breading station with the beaten egg in one bowl and the panko-Parmesan mixture in another. Dip each chicken bomb into the beaten egg, then coat generously with the breadcrumb mixture, pressing lightly to ensure it sticks.

Step 4: Fry to Perfection

Pour vegetable oil into a deep skillet or pot, filling it about halfway up the sides. Heat the oil to 350°F (175°C). Use a thermometer to monitor the temperature for best results.

Carefully drop the coated chicken bombs into the hot oil, frying in batches if necessary. Cook for 3-4 minutes per side, or until golden brown and cooked through.

Step 5: Drain and Serve

Remove the fried chicken bombs from the oil using a slotted spoon and place them on paper towels to drain excess grease. Sprinkle lightly with additional salt while they’re still warm.

Serve immediately alongside extra ranch dressing for dipping, or pair with marinara sauce for added variety.
