Mediterranean Grilled Cheese Sandwich
INGREDIENTS:
For the Sandwich:
4 slices of artisan bread (such as sourdough, ciabatta, or whole grain)
2 tablespoons unsalted butter (softened, for spreading)
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
2 tablespoons sun-dried tomatoes (chopped)
1/4 cup Kalamata olives (sliced)
Fresh basil leaves (a few sprigs per sandwich)
1 teaspoon dried oregano (optional, for extra Mediterranean flavor)
Optional Add-Ins:
Roasted red peppers
Baby spinach or arugula
Grilled eggplant or zucchini slices
DIRECTIONS:
Step 1: Prepare the Bread
Spread softened butter evenly on one side of each slice of bread. This will create a golden, crispy exterior when grilled.
Step 2: Layer the Fillings
On the unbuttered side of two slices of bread, sprinkle half of the shredded mozzarella cheese.
Add a layer of sun-dried tomatoes, sliced olives, and fresh basil leaves. Sprinkle crumbled feta cheese and dried oregano (if using) over the top.
Finish with the remaining shredded mozzarella cheese to help bind the layers together.
Step 3: Assemble the Sandwich
Top each prepared slice of bread with the remaining slices (buttered side facing out). Press gently to hold the layers together.
Step 4: Grill the Sandwich
Heat a skillet or griddle over medium heat.
Place the assembled sandwiches in the skillet and cook for 2–3 minutes per side , or until the bread is golden brown and the cheese is melted. Use a spatula to press down gently while cooking for even melting.
