Meatloaf Cupcakes with Mashed Potato Frosting

INGREDIENTS:

1 lb ground beef
1 egg
¾ cup milk
1 cup Cheddar cheese, grated
½ cup oats
½ tsp garlic powder
2 tsp onion powder
2 tsp Worcestershire sauce
¼ cup crackers, crushed
⅓ cup ketchup
1 tbsp brown sugar
2 tsp mustard
2 cups mashed potatoes
1 tbsp parsley, chopped
salt
pepper

DIRECTIONS:

1 First, preheat your oven to 350 F.
2 In a small bowl, mix ketchup, sugar, and mustard until combined. Set aside.
3 In another bowl, mix the remaining ingredients until fully combined. Press the meat mixture into a greased or lined muffin pan. Next, on top of each meatloaf, spread the ketchup and mustard mixture.
4 Bake in the oven for 30-45 minutes.
5 Transfer mashed potatoes to a piping bag and set aside until needed.
6 When done, allow to cool for 5 minutes and then take it out the pan. Pipe on the mashed potato to look like frosting. Sprinkle with parsley and serve.
