Mango Coconut Popsicles
INGREDIENTS:
2 ripe mangoes, peeled and diced
1 can (13.5 oz) coconut milk
1/4 cup honey or maple syrup (adjust to taste)
Juice of 1 lime
Optional: shredded coconut or chopped mint for garnish
DIRECTIONS:
In a blender, combine the diced mangoes, coconut milk, honey or maple syrup, and lime juice. Blend until smooth and creamy.
Taste the mixture and adjust sweetness as needed by adding more honey or maple syrup if desired.
If using garnish, sprinkle a small amount of shredded coconut or chopped mint into the bottom of each popsicle mold.
Pour the mango coconut mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or until the popsicles are completely frozen.
Once frozen, run the molds under warm water for a few seconds to loosen the popsicles, then gently remove them from the molds.
If desired, roll the edges of the popsicles in shredded coconut for an extra touch of tropical flavor.
Serve these delightful Mango Coconut Popsicles immediately and enjoy the taste of summer!
