1 1/2 lbs (680 g) ground beef (or a mix of beef and pork)
1/2 cup (50 g) breadcrumbs
1 small onion, finely chopped
1 large egg
1/4 cup (60 ml) ketchup
1 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
For the Mashed Potato Layer
2 lbs (900 g) potatoes, peeled and cubed
1/4 cup (60 ml) milk or heavy cream
3 tbsp unsalted butter
1/2 cup (50 g) shredded cheddar cheese
Salt and black pepper to taste
For the Topping
1 cup (100 g) shredded cheddar cheese
1/2 cup (50 g) cooked bacon, crumbled
2 green onions, sliced
DIRECTIONS:
Step 1: Prepare the Meatloaf Layer
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large bowl, combine the ground beef, breadcrumbs, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until just combined.
Press the meatloaf mixture evenly into the bottom of the prepared baking dish.
Step 2: Bake the Meatloaf
Bake the meatloaf layer for 20-25 minutes, or until partially cooked but not fully done.
Step 3: Prepare the Mashed Potatoes
While the meatloaf is baking, boil the potatoes in a large pot of salted water until fork-tender, about 15 minutes.
