Lemon Tartlets
These Lemon Tartlets are the perfect blend of tangy and sweet, featuring a buttery sablé dough crust and a creamy lemon mousse filling. They’re elegant, refreshing, and a great dessert for any occasion!
INGREDIENTS:
Tartlet Dough (Sablé Dough):
2 tbsp well-filled soft margarine (125g)
A pinch of salt
1 egg yolk
½ cup fine sugar
2 tbsp oil
1 tbsp cornstarch
¼ tsp cake yeast
1½ cups flour
Lemon Mousse Cream:
1 cup lemon juice
1 cup water
2 tbsp cornstarch
3+ tbsp sugar (adjust to taste)
1 tsp lavender (optional)
For Mixing & Garnishing:
1½ cups Chantilly powder
1 cup cold water
Meringue or Chantilly cream (for decoration)
DIRECTIONS:
Step 1: Prepare the Dough
1️⃣ In a bowl, mix margarine, salt, egg yolk, sugar, and oil until smooth.
2️⃣ Add the cornstarch, cake yeast, and flour gradually until a soft dough forms.
3️⃣ Roll out the dough and cut into small tartlet molds.
4️⃣ Bake at 350°F (180°C) for 10-15 minutes, or until golden. Let them cool.
Step 2: Make the Lemon Mousse Cream
1️⃣ Mix lemon juice, water, cornstarch, sugar, and lavender in a pot while cold.
2️⃣ Heat the mixture, stirring constantly until it thickens.
3️⃣ Let it cool for at least 2 hours.
Step 3: Prepare the Mousse
1️⃣ Whip Chantilly powder with cold water until thick.
2️⃣ Fold it gently into the cooled lemon cream to create a smooth lemon mousse.
Step 4: Assemble & Serve
1️⃣ Fill each tartlet shell with lemon mousse.
2️⃣ Decorate with meringue or Chantilly cream.
3️⃣ Serve chilled & enjoy! 🥰
